A real simple sauce for us root beer lovers.

Root Beer BBQ Sauce

 

Ingredients:

6 cups root beer

1 cup ketchup

1/4 cup molasses

1/8 cup apple cider vinegar

1 cinnamon stick

3 TBS brown sugar

1/2 tsp paprika

1/4 tsp ground ginger

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp black pepper

2 TBS worcetershire sauce

1 tsp yellow mustard

Directions:

Add the cinnamon stick to the root beer and boil it on high heat until it is reduced to about 1/3 of it’s original volume.  Reduce heat down to a slow rolling boil and remove the cinnamon.  Stir in the rest of the ingredients except the vinegar.  Boil for ten minutes.  Add the vinegar and reduce heat to a simmer for another ten minutes.  Remove from heat and allow to cool and thicken.

Sweet Chili Glaze

A quick and easy glaze that is sweet and spicy.  Great for pork, but even better dabbed on the top of some ice cream.

Ingredients:

4 tsp oil

4 tsp chili powder

1/2 cup frozen pineapple juice concentrate, thawed

Heat the oil in a saucepan, mix in the chili powder and keep stirring until it is well mixed and starts to sizzle.  Add the pineapple concentrate.  Cook it down until it is nice and thick.  It should yield about 4 tbs.  You can let it cool slightly but will want to smear it on your meat before it cools completely as it gets really thick when it cools and is harder to spread.  The original recipe I started with called for a tsp of cumin as well.  The chili powder I use has plenty of cumin in it already so I just leave that out.  It’s not as good on the ice cream with an overpowering cumin flavor.
